Word got to us that someone, somewhere declared April national grilled cheese month. Usually we simply roll our eyes at such silly dedicated months but this one was different. As lovers of all things college we can fully appreciate the deliciousness of a good grilled cheese sandwich.
While we see nothing wrong with the standard bread+cheese+butter version, our tastes have evolved since our 4-year-old days and some of the new combinations are mouth-watering and awe-inspiring. Here are some of our recommendations to perfect the comfort food favorite:
Onion Soup Grilled Cheese- Layer some crusty bread with swiss or provalone cheese and top with sweet caramelized onions. After grilling this one tastes just like French onion soup, but it’s a lot easier to eat while studying.
Apple and Bacon- Yep- you heard us right, we said apple. Compose this grilled cheese sandwich with a filling of thinly sliced green apple, a few strips of cooked bacon and top it with sharp cheddar cheese. You’ll never go back to a normal grilled cheese again.
Caprese- Spread a thin layer of pesto on your bread and top with fresh mozzarella and tomatoes. For an extra boost of flavor add a few leaves of fresh basil. This is an excellent pairing for tomato soup.
Stuffed Jalapeño- Can’t get enough of those cheese filled jalapeños? No need to limit that flavor combination to something deep fried. Simply spread room temperature cream cheese on a slice of bread and top with jalapeños. You’ll get that creamy kick without all the fat.
Grilled Cheesecake- While this one may not be easy on the waistline, it sure is on the taste buds. Cream together cream cheese and sugar until you get a sweetness you enjoy. Spread the mixture between two slices of buttered pound cake of any flavor. Grill it until the cream cheese melts and enjoy!
